hocks n coqs italian market style sandwich

serves 4

1 pkg pulled pork/chicken

1 1/2 cups broccoli rabe/spinach, cooked 

2 tbsp. garlic, minced 

2 tbsp. butter, melted 

1 baguette, portioned into 4 pieces and split

1/2 cup roasted red peppers, chopped 

1 cup sharp provolone, shredded 

 

warm pulled pork/chicken in the microwave or skillet until warm. mix together garlic and melted butter and brush split baguette portions. evenly distribute meat, rabe/spinach, red peppers and provolone to each portion. preheat oven to 400 degrees. place sandwiches on a cookie sheet and bake for 6-7 minutes or until cheese has melted and bread is toasted. serve asap.

***you could also grill the sandwiches or use a panini press.
